Waves jerk sauce is one of the special sauces that can be used to enhance any dish weather it’s a vegetarian dish or not
Ingredients
- 4 medium eggplants
- ½ cup waves jerk sauce
- 16 cloves of garlic
- 2 tsp salt
- ½ cup chopped onions
- ¼ cup olive oil
Directions
- Wash the eggplants then dry
- With a paring knife make severals cuts all over each eggplant
- Wash and peel the garlic, cut each clove of garlic into two pieces
- Insert the garlic pieces into each cut on the eggplant
- Rub each eggplant with olive oil
- Grease a cookie sheet or any flat baking sheet
- Place the eggplant on the cookie sheet and placed in a heated over of 400 degrees for 6 minutes then turn and bake for 6 more minutes or until soft, take the eggplant out and let sit for 2 minutes
- Cut each eggplant into halves, with a fork take the insides of the eggplant out, without using the skin place in a small bowl
- Place a saucepan on medium heat add oil and onion saute until onion is translucent add the eggplant, waves jerk sauce and salt
- Stirring constantly for 2 minutes
- This dish can be served with bread/tortilla or over rice/pasta
