The Waves Jerk Sauce gives the Nachos a Caribbean kick.

Ingredients

  • 2 lbs ground beef/chicken
  • 1 cup chopped onions
  • ¼ cup bell peppers
  • 11/2 cup waves jerk sauce
  • 1 can refried beans
  • 1/2 cup scotch bonnet pepper sauce
  • 2 tsp salt
  • 1 bag tortilla chips
  • ½ cup diced tomatoes
  • 1 cup mozzarella shredded cheese
  • 1 cup sour cream
  • 1 can diced pineapple ( slice mango)
  • 1 cup water
  • ¼ cup cilantro

Directions

  1. In a medium saucepan saute half the amount of onion and peppers for 2 minutes 
  2. Add the ground meat stirring well let simmer for 3 minutes
  3. Add water stirring occasionally let cook for 10 minutes 
  4. Strain off excess oil, add the waves jerk sauce and salt to the ground meat, let simmer for 3 minutes stirring constantly to avoid sticking
  5. In a separate small saucepan add the refried beans,onions and half the amount of the scotch bonnet sauce stirring vigorously for 3 minutes until beans are heated
  6. Combine the diced pineapple, tomatoes,cilantro  and the scotch bonnet pepper sauce stir well add salt to taste (pineapple salsa)
  7. In a large bowl add the tortilla chips,beans,meat 2 tbsp mozzarella cheese, sour cream and garnish with the pineapple salsa
